Ingredients
- 2 raw bananas boiled with skin
- 25-30 spinach
- 1 small bunch green amaranth (chavli)
- 2 tablespoons oil
- 1/2 teaspoon split skinless black gram (dhuli urad dal)
- 1/2 teaspoons mustard seeds
- 2 dried red chillies, broken
- 1/4 teaspoon asafoetida
- Salt to taste
- 3 tablespoons scraped fresh coconut
- 2 green chillies
- 1 inch ginger
- 3-4 garlic cloves
- 1 tablespoon roasted chana dal
- A pinch turmeric powder
- 1 inch ginger, cut into thin strips
Method
- Heat oil in a pan, add split black gram, mustard seeds, broken red chillies, curry leaves and asafoetida and saute till the seeds splutter.
- Add spinach, amaranth and salt and mix. Add ¼ cup water and mix. Cover and cook.
- Grind together coconut, green chillies, ginger, garlic, roasted chana with little water.
- Peel the bananas, slice into round pieces and add to the pan. Add a pinch of turmeric powder and mix.
- Add the ground paste and mix. Cover and cook for 4-5 minutes.
- Transfer into a serving dish and serve hot garnished with ginger strips.
