Meetha Poha

History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Meetha Poha Recipe

  • Pressed Rice grated 2 1/4 tablespoons

  • Jaggery 3 tablespoons

  • Pressed rice (poha) 1 cup

  • Ghee 1 1/2 tablespoons

  • Cashewnuts halved 8-10

  • Raisins 2 tablespoons

  • Saffron (kesar) a few strands

  • Green cardamom powder 1/2 teaspoon

Method

Step 1

Heat ghee in a non-stick pan. Add cashewnuts and raisins and sauté for 2 minutes. drain and set aside in a bowl. Soak saffron in ½ cup water in a bowl and heat in the microwave for 1 minute.

Step 2

Add poha to the ghee remaining in the pan and sauté for 2-3 minutes. Add saffron water and mix and cook till poha is half done.

Step 3

Add sugar and mix. Add green cardamom powder and mix again. Cook for 2-3 minutes.

Step 4

Add jaggery, mix gently and cook till fully done. Reserve a few fried dry fruits and add the remaining. Mix well and cook for 1 minute. Garnish with the reserved fried dry fruits and serve hot.
