All Asian countries are endowed with lush natural beauty and rich regional cuisines. The common thread is the use of fresh, readily available ingredients and spices to flavour the food. The dishes can be pungent, sour, sweet and sour or simply flavoured.

Ingredients for Vegetable Parcels

  • Broccoli chopped 1/4 cup

  • Button mushrooms quartered 4-6

  • Green capsicum small pieces, triangle shaped 1

  • Corn niblets 1/4 cup

  • Carrots sliced 2 medium

  • Babycorns chopped 7-8

  • Ginger chopped 1 inch piece

  • Garlic chopped 5-6 cloves

  • Spring onions with greens 3-4

  • Green chillies 2

  • Peppercorns crushed 7-8

  • Red chilli flakes 1/2 teaspoon

  • Salt to taste

  • Brown sugar 1/2 teaspoon

  • Lemon juice 2 teaspoons

  • Rosemary chopped a few sprigs

  • Fresh basil leaves torn 8-10

  • Spring onion bulb quartered 3-4


Step 1

Mix together broccoli, mushrooms, capsicum, corn niblets, carrots, babycorn, ginger, garlic, chopped spring onion, green chillies, peppercorns, red chilli flakes and salt to taste in a large bowl.

Step 2

Add brown sugar, lemon juice, rosemary, basil, quartered spring onions and toss well.

Step 3

Tear aluminium foil into large squares. Place portions of mixed vegetables in the centre, fold loosely so as to leave some air pocket in the parcel. Seal well.

Step 4

The steam should not escape. Heat a tawa and place aluminium parcels on it.

Step 5

Cook for ten minutes. Alternatively place in a hot oven at 180C and bake for ten minutes.

Step 6

Just before serving open parcels carefully, there will be some moisture, which is desirable.
