  • Broccoli chopped1/4 cup

  • Button mushrooms quartered4-6

  • Green capsicum small pieces, triangle shaped1

  • Corn niblets 1/4 cup

  • Carrots sliced2 medium

  • Babycorns chopped7-8

  • Ginger chopped1 inch piece

  • Garlic chopped5-6 cloves

  • Spring onions with greens 3-4

  • Green chillies 2

  • Peppercorns crushed7-8

  • Red chilli flakes 1/2 teaspoon

  • Salt to taste

  • Brown sugar 1/2 teaspoon

  • Lemon juice 2 teaspoons

  • Rosemary chopped a few sprigs

  • Fresh basil leaves torn8-10

  • Spring onion bulb quartered3-4


Step 1

Mix together broccoli, mushrooms, capsicum, corn niblets, carrots, babycorn, ginger, garlic, chopped spring onion, green chillies, peppercorns, red chilli flakes and salt to taste in a large bowl.

Step 2

Add brown sugar, lemon juice, rosemary, basil, quartered spring onions and toss well.

Step 3

Tear aluminium foil into large squares. Place portions of mixed vegetables in the centre, fold loosely so as to leave some air pocket in the parcel. Seal well.

Step 4

The steam should not escape. Heat a tawa and place aluminium parcels on it.

Step 5

Cook for ten minutes. Alternatively place in a hot oven at 180C and bake for ten minutes.

Step 6

Just before serving open parcels carefully, there will be some moisture, which is desirable.
