Vegetable Lasagna

Vegetable Lasagna Recipe - how to make Vegetable Lasagna

  • Lasagne sheets 6

  • Salt to taste

  • White sauce 1 1/2 cups

  • Processed cheese grated1/2 cup

  • Parmesan cheese powdered1/4 cup

  • Oil 2 tablespoons

  • Butter 1 tablespoon

  • Garlic crushed 6 cloves

  • Onion chopped1 medium

  • Button mushrooms sliced4-5

  • Brinjal sliced 1 medium

  • Zucchini sliced1 medium

  • Tomatoes blanched and chopped3 medium

  • Green capsicum sliced1 medium

  • Dry Basil 1/4 teaspoon

  • Fresh parsley chopped3 tablespoons


Step 1

Heat plenty of water in a deep pan. Add salt and add the lasagna sheets. Heat oil and butter in another pan. Add garlic, onions and sauté, Add mushrooms, brinjal, zucchini, salt and mix. Add tomatoes and cook for two minutes. Add capsicum, dried basil, parsley and mix. Preheat the oven to 200C.

Step 2

Take a baking dish and spread a thin layer of white sauce. Over that spread a layer of vegetables followed by a layer of lasagne sheets. Repeat the layers twice more. Pour the remaining white sauce on top and spread evenly. Spread a layer of grated cheese and powdered Parmesan cheese.

Step 3

Bake in the preheated oven for at 200?C for about twenty minutes until the cheese has turned golden. Serve hot.
