Ingredients for Tortilla With Grilled Vegetables And Rice - Grill Recipe

  • Tortilla 1 medium

  • Green Capsicum 2 medium

  • Carrots 2 small

  • Broccoli 1 small

  • Olive oil 2 tablespoons

  • Salt to taste

  • Crushed red chillies 1/2 teaspoon

  • Chilli sauce 1 tablespoon

  • Rice

  • Olive oil 2 tablespoons

  • Onion chopped 1 medium

  • Garlic chopped 2-3 cloves

  • Rice boiled 1 cup

  • Salsa 4 tablespoons

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespoons

  • Mixed herbs 1 teaspoon

  • For Serving

  • Tortillas 4

  • Chilli sauce as required

Method

Step 1

Remove seeds and cut green capsicum into small triangles. Quarter the onions and separate the layers. Cut the carrots into small triangles. Separate the broccoli into small florets. Heat olive oil in the Grill Pan.

Step 2

Add green capsicum, onion, carrots and sauté without stirring so that they burn slightly. Then stir. Add broccoli and cook for some time. Add salt and crushed red chillies and mix.

Step 3

To make the rice, heat olive oil in a pan. Add onion, garlic and stir. Cook for three to four minutes. Add boiled rice and salsa. Mix and add coriander leaves and dried herbs. Mix and set aside.

Step 4

Add chilli sauce to the vegetables and stir. Place a tortilla on a flat surface. Put some rice on it and top it up with the grilled vegetables.

Step 5

Add chilli sauce on top and roll. Wrap in a butter paper and serve. Make other rolls in a similar way.
