Ingredients list for Tomato and Egg Chinese Style
- 5-6 Medium tomatoes
- 4 Eggs
- 1 tablespoon Oil
- 3 Spring onion bulbs
- 2 Green chillies
- 1/2 teaspoon Soy sauce
- 1 tablespoon Sweet red chilli sauce
- to taste Salt
- 8-10 Fresh coriander sprigs
- 4 teaspoons Cornflour slurry
Method
- Heat oil in a non-stick pan.
- Halve the tomatoes and further cut each half into four pieces and add to the pan.
- Slice spring onion bulbs.
- Break eggs in a bowl.
- Saute the tomatoes for 2-3 minutes and then drain into a bowl.
- Add sliced spring onion bulbs to the oil remaining in the pan and saute lightly.
- Beat eggs lightly and add to the pan.
- Slice green chillies diagonally and add to the pan, scramble the eggs on high heat.
- Add soy sauce and chilli sauce and mix well. Add tomatoes and salt and mix lightly. Drizzle a little water and cook.
- Finely chop coriander sprigs and add to the pan. Add cornflour slurry, mix well and cook for a minute. Serve hot.
