Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Ingredients for Tomato and Egg Chinese Style Recipe

  • Tomatoes medium 5-6

  • Eggs 4

  • Oil 2 teaspoons

  • Spring onion bulbs 3

  • Green chillies 2

  • Soy sauce 1/2 teaspoon

  • Sweet red chilli sauce 1 tablespoon

  • Salt to taste

  • Fresh coriander sprigs 8-10

  • Cornstarch slurry 4 teaspoons

Method

Step 1

Heat oil in a non-stick pan.

Step 2

Halve tomatoes and cut into four pieces and add to the pan, saute for 2-3 minutes and remove from heat.

Step 3

Slice spring onion bulbs.

Step 4

Break eggs in a bowl.

Step 5

Add sliced spring onion bulbs in the pan and saute lightly.

Step 6

Beat eggs lightly and add to the pan.

Step 7

Roughly slice green chillies and add to the pan, scramble the eggs on high heat.

Step 8

Add soy sauce, chilli sauce and mix well. Add tomatoes, salt and toss to mix. Drizzle little water and cook.

Step 9

Finely chop coriander sprigs and add to the pan alongwith cornstarch slurry, mix well and cook for a minute.

Step 10

Serve hot.
