Pre-heat the oven to 220ºC. Drain and then grind the sun-dried tomatoes to a fine paste using little water.
Place the French bread slices in a greased baking tray. Spread the sun-dried tomato paste on one side of the toast. Place the grated mozzarella cheese on top of it.
Sprinkle the herbs, crushed peppercorns and salt on top. Drizzle olive oil and bake in the preheated oven for five minutes or till the cheese melts. Serve hot.
