How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Cook time : 16-20 minutes

Ingredients for Thai Fragrant Rice Recipe

  • Brown Rice soaked for an hour 1 1/2 cups

  • Vegetable Stock 2 inch

  • Oil 1 tablespoon

  • Lemon 1

  • Grated garlic 1 tablespoon

  • Bird’s eye chillies 4

  • Salt to taste

  • Vegetable stock 3 cups

  • Lime leaf 1


Step 1

Roughly chop lemongrass.

Step 2

Heat oil in a deep non-stick pan and add lemongrass.

Step 3

Grate the rind of 1 lemon into a bowl.

Step 4

Add garlic to the pan and sauté till the garlic turns brown. Add rice and mix well. Add lemon rind and mix again.

Step 5

Roughly chop bird’s eye chillies with stem intact and add to the pan. Add salt, vegetable stock and lime leaf and mix well. Cover and cook till the rice is fully done.

Step 6

Transfer into a serving bowl and serve hot.
