This recipe is from FoodFood TV channel By Sanjeev Kapoor 11 Mar 2015 in Recipes Course New Update Main Ingredients Boneless Chicken, Basmati Rice Cuisine Thai Course Rice Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Non Veg Ingredients list for Thai Chicken Rice 400 grams Boneless Chicken cut into 1 cm pieces 1 1/2 cups Basmati Rice soaked 2 tablespoons Oil 4 tablespoons Shallots chopped 1 teaspoon Ginger chopped 2 tablespoons Curry powder 1 teaspoon Garlic chopped 1 tablespoon Thai red curry paste to taste Salt 1 cup Coconut milk 2 Fresh red chillies 1 tablespoon Lemon juice Method Heat oil in a rice cooker, add shallots, ginger and garlic. Mix and sauté for 1 minute. Add red curry paste and chicken and mix. Add curry powder, salt and 2 cups water and mix well. Add rice and mix well. Add coconut milk and mix again.Diagonally slice red chillies and add along with lemon juice. Mix well, cover and cook till done.
