Sticky Marmalade Squares

Main Ingredients

Orange marmalade , Refined flour (maida)

  • Orange marmalade
    6 tablespoons
  • Refined flour (maida)
    2 3/4 cups
  • Unsalted butter, chilled, diced
    200 grams
  • Brown sugar
    3/4 cup + 1 tablepoons
  • Soda bicarbonate
    1/2 teaspoon
  • Egg beaten
  • Cream
    1/2 cup + 1 tablespoon
  • Walnut kernels chopped
    1/2 cup
  • Tutti frutti
    3/4 cup
  • Orange juice
    1-2 tablespoons


Step 1

Preheat oven to 190°C/375°F/Gas Mark 5. Grease a shallow tray. Take flour in a bowl, add butter and rub in with your fingertips. Add sugar and mix lightly. Spread half the mixture over the base of the prepared tray. Press down firmly.

Step 2

Bake in the preheated oven for about ten to fifteen minutes or until lightly browned. Take the tray out and set aside to cool. To make the filling, take the remaining flour mixture in a bowl. Add soda bi carbonate and mix.

Step 3

Add egg, cream, walnuts, tutti frutti and half the marmalade. Pour the mixture over the cooled base and return the tray to the oven and bake for twenty to twenty five minutes or until the filing is just firm and golden brown.

Step 4

Take the remaining marmalade in a small pan and heat gently. Add just enough orange juice so that the glaze can be spread easily.

Step 5

Brush this glaze over the baked cookie mixture while it is still warm. Let it cool completely before cutting into bars or squares.
