Sticky Marmalade Squares

This term Continental cuisine refers to the food eaten in the European countries. Under the mantle of Continental food come the British, American, Italian, New Zealand, Armenian, Hungarian, Russian and many other European cuisines.

Instead fresh herbs and dairy products form an important part of continental dishes.  The cooking methods are mostly stewing, grilling and roasting which make the food low in calories as they use very less fat. Ingredients

  • Orange marmalade 6 tablespoons

  • Refined flour (maida) 2 3/4 cups

  • Unsalted butter, chilled, diced 200 grams

  • Brown sugar 3/4 cup + 1 tablepoons

  • Soda bicarbonate 1/2 teaspoon

  • Egg beaten 1

  • Cream 1/2 cup + 1 tablespoon

  • Walnut kernels chopped 1/2 cup

  • Tutti frutti 3/4 cup

  • Orange juice 1-2 tablespoons

Preparation

Step 1


Preheat oven to 190°C/375°F/Gas Mark 5. Grease a shallow tray. Take flour in a bowl, add butter and rub in with your fingertips. Add sugar and mix lightly. Spread half the mixture over the base of the prepared tray. Press down firmly.

Step 2


Bake in the preheated oven for about ten to fifteen minutes or until lightly browned. Take the tray out and set aside to cool. To make the filling, take the remaining flour mixture in a bowl. Add soda bi carbonate and mix.

Step 3


Add egg, cream, walnuts, tutti frutti and half the marmalade. Pour the mixture over the cooled base and return the tray to the oven and bake for twenty to twenty five minutes or until the filing is just firm and golden brown.

Step 4


Take the remaining marmalade in a small pan and heat gently. Add just enough orange juice so that the glaze can be spread easily.

Step 5


Brush this glaze over the baked cookie mixture while it is still warm. Let it cool completely before cutting into bars or squares.
