Ingredients list for Spiced Carrot Soup Shots

  • 2-3 medium Carrots peeled & finely chopped
  • 1 Red chilli chopped
  • 4-5 Black peppercorns
  • 2 tablespoons Extra virgin olive oil
  • 1 medium Onion sliced
  • 1 teaspoon Garlic chopped
  • 1 small Potato peeled & finely chopped
  • to taste Salt
  • a few sprigs Fresh coriander leaves

Method

  1. Heat 1 tbsp olive oil in a deep non stick pan, add onion and garlic and saute for 1 minute. Add black peppercorns, potato and carrot and saute for another minute. Add salt and mix. Add fresh red chilli and mix. Add 2 cups water and mix.
  2. Heat remaining olive oil in a non stick pan. Finely chop a few sprigs of fresh coriander leaves. Cover the pan with carrots and cook till soft. Cool and transfer into a blender jar.
  3. Add coriander leaves to the other pan and switch off the heat. Blend the carrot mixture till smooth. Add a little water to adjust the consistency.
  4. Transfer the mixture into a jar and then pour into shot glasses. Garnish with the coriander leaves in extra virgin olive oil and serve.
