Skordalia Recipe - Chilled bread and almond soup.

Mediterranean food is immensely popular all over the world. The wonderful aromas and flavours of the varied cuisines of this region tend to leave a lasting impression on all those who appreciate good food.  Two adjectives – robust and intense – beautifully describe the range of dishes from coastal Spain through France, Italy, Greece, Turkey and along North Africa.
These countries have influenced each other’s food habits over the years and their cooking has evolved into sharing common principles. There is a great regional diversity between the countries around the Mediterranean Sea and yet there are so many similarities. The hall mark of Mediterranean cuisine is its flexibility, the vast range of ingredients and its numerous variations.

Ingredients for Skordalia

  • Bread one day old 1 loaf

  • Almonds blanched 1 1/4 cups

  • Garlic 4-6 cloves

  • Extra virgin olive oil 2-3 cup

  • Vinegar 2 tablespoons

  • Salt to taste

  • Black peppercorns crushed to taste

  • Fresh coriander leaves to garnish

  • Parsley to garnish

Method

Step 1

Remove the crust of the bread and tear the rest into small pieces. Soak them in a in a little water in a bowl. Squeeze the bread and set aside.

Step 2

Process almonds and garlic in a food processor until finely chopped. Add the squeezed bread and process until well blended. With the motor running slowly gradually add the olive oil to form a thick paste.

Step 3

Add the vinegar and process again. Season with salt and crushed peppercorns to taste. Transfer into a bowl and chill.

Step 4

Serve garnished with coriander leaves and parsley sprigs.
