Ingredients for Scrambled Tofu With Mushrooms

  • Tofu grated 2 cups

  • Oil 1 1/2 tablespoons

  • Garlic sliced 2 cloves

  • Baby onions sliced 3-4

  • Button mushrooms 8-10

  • Fresh red chillies sliced 3-4

  • Green chillies sliced 2

  • Spring onions sliced 2

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Black salt (kala namak) to taste

  • Tomato chopped 1 medium

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Heat oil in a pan, add garlic, baby onions and sauté for a couple of minutes.

Step 2

Add mushrooms and toss. Add fresh red chillies, green chillies and continue to Add spring onions with chopped greens and continue to sauté.

Step 3

Add turmeric powder, red chilli powder and sauté. Add grated tofu, garam masala powder and black salt and mix gently. Add tomato and coriander leaves and mix. Serve hot with bread or toast.
