Ingredients for Roasted Banana and Raisin Ice Cream Recipe

  • Ripe bananas 5

  • Oranges 2

  • Honey 5-6 tablespoons

  • Cinnamon powder 2 teaspoons

  • Milk 300 millilitres

  • Yogurt 250 grams

  • Sea salt a pinch

  • Raisins ½ cup

  • Cocoa powder for dusting

Method

Step 1

Preheat oven to 180ºC.

Step 2

Peel the bananas and place them in a baking dish. Grate the orange zest over them.

Step 3

Halve and squeeze the juice of 1½ oranges into the dish. Drizzle honey and sprinkle 1 teaspoon cinnamon powder on top.

Step 4

Place the dish in the preheated oven and roast for 20 minutes. Remove from oven and set aside to cool.

Step 5

Blend the roasted bananas with the liquid remaining in the dish along with milk and yogurt till smooth.

Step 6

Add juice of the remaining ½ orange, sea salt, remaining cinnamon powder and raisins and mix well. Transfer the mixture into an airtight container, put the lid on and freeze for 6-8 hours.

Step 7

Dust cocoa powder and serve in scoops.
