Ingredients list for Rice Pudding with Dried Fruit Compote
- 1 litre Milk
- 2 tablespoons Rice
- 15-20 Dried apricots chopped
- 15-20 Dried figs chopped
- 15-20 Prunes chopped
- 2 one-inch Cinnamon sticks
- 3 tablespoons Sugar
- 1/2 teaspoon Vanilla essence
Method
- Pour milk into a deep pan, add rice and cook.
- Heat a non-stick pan, add dried apricots, figs, prunes and 1½ cups water and mix. Add cinnamon and cook.
- Add 3 tbsps sugar to milk-rice mixture and cook till rice is fully cooked and the mixture thick. Cool.
- Put a scoop of kheer in martini glasses.
- Add vanilla essence to the fruits and mix. Put the fruit compote over the kheer and serve.
