Rice Pudding with Dried Fruit Compote

Ingredients for Rice Pudding with Dried Fruit Compote Recipe

  • Milk 1 litre

  • Rice 2 tablespoons

  • Dried apricots chopped 15-20

  • Dried figs chopped 15-20

  • Prunes chopped 15-20

  • Cinnamon sticks 2 one-inch

  • Sugar 3 tablespoons

  • Vanilla essence 1/2 teaspoon


Step 1

Pour milk into a deep pan, add rice and cook.

Step 2

Heat a non-stick pan, add dried apricots, figs, prunes and 1½ cups water and mix. Add cinnamon and cook.

Step 3

Add 3 tbsps sugar to milk-rice mixture and cook till rice is fully cooked and the mixture thick. Cool.

Step 4

Put a scoop of kheer in martini glasses.

Step 5

Add vanilla essence to the fruits and mix. Put the fruit compote over the kheer and serve.
