How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Rice Crispies Chivda Recipe

  • Puffed rice (kurmura/murmura) 1 cup

  • Corn flakes ½ cup

  • brown rice crispies 1 cup

  • Oil 1 tablespoon

  • Mustard seeds ½ teaspoon

  • Fennel seeds (saunf) ½ teaspoon

  • Small Green Chillies chopped 2

  • Fresh coriander leaves chopped 2 tablespoons

  • Curry leaves 6-7

  • Garlic cloves sliced 4-5

  • Turmeric powder ½ teaspoon

  • Roasted peanuts 2 tablespoons

  • Almonds slivered 8-10

  • Pistachios slivered 12-15

  • Cashewnuts halved 6-8

  • Raisins tablespoon

  • Melon seeds (magaz) 1 tablespoon

  • White sesame seeds 2 teaspoons

  • Flax seeds 2 teaspoons

  • Dried coconut ( khopra) grated and roasted ½ cup

  • Salt to taste

  • Sugar 1 teaspoon

Method

Step 1

Heat oil in a non-stick pan. Add mustard seeds and fennel seeds and let the seeds splutter.

Step 2

Add green chillies, coriander leaves and curry leaves and sauté till the curry leaves turn crisp.

Step 3

Add garlic and sauté for 1 minute. Add turmeric powder, mix well and sauté for 30 seconds.

Step 4

Reduce heat, add peanuts, almonds, pistachios, cashewnuts, raisins, melon seeds, sesame seeds and flax seeds, mix and sauté for 1-2 minutes.

Step 5

Add coconut and sauté till it turns golden brown. Add brown rice crispies, puffed rice and cornflakes, mix well and sauté for 4-5 minutes.

Step 6

Add salt and sugar and mix well. Remove from heat and cool.

Step 7

Serve or store in an airtight container.
