Ingredients for Pumpkin Cake Recipe

  • pumpkin puree 3/4 cup

  • brown sugar/jaggery 1/2 grams

  • Olive oil 1/4 cup + for greasing

  • Rolled oats 1 cup

  • Buttermilk 1/2 cup

  • Refined flour (maida) 3/4 cup + for dusting

  • Sugar 1/2 cup

  • Eggs 2

  • Baking powder 1/2 teaspoon

  • Baking soda 1/2 teaspoon

  • Nutmeg powder 1/4 teaspoon

  • Vanilla essence 1 teaspoon

  • Salt a pinch

Method

Step 1

Preheat oven to 180°C. Grease an aluminium baking tin and dust with flour.

Step 2

Mix oats and buttermilk with milk in a bowl. Add pumpkin puree and mix well. Add brown sugar and sugar and mix again. Break eggs and add and whisk well.

Step 3

Sieve together flour, baking powder, baking soda, nutmeg powder and salt into the bowl and mix everything well.

Step 4

Add vanilla essence and olive oil and mix well.

Step 5

Pour batter into the baking tin and place in preheated oven. Bake for 30 minutes.

Step 6

Slice and serve.
