Ingredients for Prawn and Pomelo Salad Recipe

  • Prawns steamed 200 grams

  • Pomelo peeled 100 grams

  • Tomatoes diced 100 grams

  • Spring onions sliced 100 grams

  • Coconut shredded 50 grams

  • Onion sliced 1 medium

  • Lemon grass only the soft part 1 stalk

  • Dressing

  • Red chilli paste 1 tablespoon

  • Olive oil extra virgin 2 tablespoons

  • Basil leaves shredded a handful

  • Jaggery water 2 tablespoons

  • Peanuts/Hazelnuts 2 tablespoons

  • Salt to season

  • Lemon juice 1 tablespoon

Method

Step 1

In a dry mixing bowl, whisk the oil, jaggery water, lemon juice and chilli paste.

Step 2

Add the shredded basil and season with salt.

Step 3

In another bowl mix all the ingredients for the salad, add the dressing and give it a good massage.

Step 4

Serve with a sprinkling of roasted peanut and hazelnut.
