And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Potato and Spinach Soup Recipe

  • Potatoes boiled and peeled 2 medium

  • Spinach blanched 1 medium bunch

  • Oil 2 tablespoons

  • Onions 2 medium

  • Garlic 3-4 cloves

  • Salt to taste

  • Milk 1/2 cup

  • Vegetable stock cubes 1

  • Black pepper powder to taste

Method

Step 1

Heat oil in a deep non stick pan. Chop onions roughly and add along with garlic and saute, Roughly chop spinach.

Step 2

Crush potatoes and add to the pan. Add 2 cups water and salt and cook.Grind spinach with ¼ cup milk to smooth puree.

Step 3

Add vegetable stock cube to the pan and continue to cook till onions are soft. Strain and let the residue cool. Then add it to the spinach and grind till smooth.

Step 4

Put the strained stock back in the pan. Add the spinach puree and mix well. Add pepper powder and remaining milk, mix well and let it come to a boil.

Step 5

Pour into a soup bowl and sprinkle some pepper powder. Serve piping hot.
