Ingredients list for Panzanella

  • 5-6 White Bread 1 inch pieces stale
  • to taste Tomatoes
  • 5 medium Tomato seeded and cut into 1/2 inch cubes
  • 1 medium Onion,chopped
  • 1 large Cucumber seeded and cut into 1/2 inch cubes
  • 1 bunch Basil leaves chopped
  • Dressing
  • 1/4 cup Salad oil
  • 1 tablespoon Vinegar
  • to taste Salt
  • 1/2 teaspoon Black pepper powder
  • 1/2 tablespoon Mixed herbs
  • 1/2 teaspoon Mustard paste

Method

  1. Add a pinch of salt to two cups of water, dip the bread pieces in it and remove. Press the bread to squeeze out the water. In a salad bowl, mix together the bread, tomatoes, onion, cucumber and the fresh basil and chill in a refrigerator.
  2. To make the dressing, mix together salad oil, vinegar, salt, pepper powder, dried herbs and mustard paste. Just before serving, remove the salad bowl from the refrigerator, add the dressing and mix thoroughly. Serve chilled.
