  • Tomatoes quartered
    8 medium
  • Sea salt
    to taste
  • Olive oil
    2 tablespoons
  • Garlic
    4-5 cloves
  • Ginger roughly chopped
    1 inch piece
  • Fresh coriander leaves chopped
    1/2 cup
  • Tamarind pulp
    1 teaspoon


Step 1

Preheat the oven at 200° C. Combine the tomatoes, sea salt, olive oil, garlic and ginger in a baking dish. Place the dish in the preheated oven and roast for twenty to twenty-five minutes or till dry.

Step 2

Remove from oven and cool down to room temperature.

Step 3

Blend the roasted tomato mixture with coriander leaves and tamarind pulp till smooth. Serve as an accompaniment with your choice of bread.
