Ingredients list for Noodle Salad
- 1/2 cup Noodles boiled
- 1 medium Vegetables cut into small pieces
- 1 medium Capsicum cut into thick strips
- 1 cup Peanuts crushed
- 1 tablespoon Lemon juice
- 1/2 teaspoon Red chilli powder
- 1 teaspoon Oil
- 1 teaspoon Mustard seeds
- 4-5 Curry leaves
- to taste Salt
- 2 tablespoons coriander leaves
Method
- Mix together carrot, capsicum, peanuts, lemon juice, red chilli powder in a bowl.
- Heat oil in a non stick pan. Add mustard seeds.
- Once they splutter, add curry leaves and add this to the salad.
- Add boiled noodles and mix well.
- Refrigerate for one hour. Add salt and mix well.
- Serve chilled garnished with coriander leaves.
