How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

  • Basmati rice 1 cup

  • Button mushrooms sliced24

  • Butter 1 tablespoon

  • Green cardamoms 2

  • Cloves 4

  • Cinnamon 1/2 inch stick

  • Star anise 1

  • Onion sliced 1 medium

  • Ginger-garlic paste 1 teaspoon

  • Green chillies sliced 2-3

  • Tomato chopped 1 medium

  • Salt to taste

  • Coconut milk 1/2 cup

  • Coriander and mint chutney chopped 1/2 cup


Step 1

In a bowl mix together potatoes, onion, carrots and yogurt. Mix well. Heat oil in a non stick pan, add cumin seeds and green chillies, allow it to splutter. Add to the yogurt and add salt and mix well.

Step 2

In a pressure cooker heat butter, add cardamom, cloves, cinnamon, star anise and saute well till fragrant. Add rice and saute well for a minute. Add onion, ginger-garlic paste, green chillies and tomatoes. Mix well. Add mushrooms and saute again.

Step 3

Add salt, coconut milk, water and chopped mint and coriander leaves. Mix well. Allow it to cook till three whistles.
