Ingredients list for Mattha

  • 2 cups Yogurt
  • 1 inch piece Ginger peeled
  • 3 Green chillies destemmed
  • a few sprigs Fresh coriander leaves chopped
  • a pinch Asafoetida
  • to taste Salt

Method

  1. Grind together ginger, green chillies and half the coriander leaves into a fine paste. Whisk yogurt, add the ground paste, asafoetida and one litre of water gradually. Mix thoroughly.
  2. Adjust salt and add remaining coriander leaves, stir and keep in the refrigerator to chill. Serve chilled.
