Ingredients for Mashed Sweet Potatoes Recipe

  • Sweet potatoes boiled 2 large

  • Olive oil 2 tablespoons

  • Shallots peeled 15-20

  • Garlic 3-4 cloves

  • Butter 2 tablespoons

  • Salt to taste

  • Crushed black peppercorns 1/4 teaspoon

  • Green chillies chopped finely 2

  • Juice of 1 lemon

  • Fresh cream 2 tablespoons

  • Alfalfa sprouts 2 tablespoons


Step 1

Halve the sweet potatoes horizontally and peel them. Heat olive oil in a non-stick pan. Chop shallots and garlic in a chopper and add to this pan and sauté. Add butter and mix and continue to sauté till soft.

Step 2

Roughly chop sweet potatoes and add to the pan and mash roughly with a fork. Add salt, crushed black peppercorns, green chillies and mix well. Add lemon juice and cream and mix well.

Step 3

Transfer into a serving bowl and sprinkle a little pepper powder on top. Garnish with a few alfalfa sprouts and serve.
