Ingredients list for Mashed Sweet Potatoes

  • 2 large Sweet potatoes boiled
  • 2 tablespoons Olive oil
  • 15-20 Shallots peeled
  • 3-4 cloves Garlic
  • 2 tablespoons Butter
  • to taste Salt
  • 1/4 teaspoon Crushed black peppercorns
  • 2 Green chillies chopped finely
  • Juice of 1 lemon
  • 2 tablespoons Fresh cream
  • 2 tablespoons Alfalfa sprouts

  1. Halve the sweet potatoes horizontally and peel them. Heat olive oil in a non-stick pan. Chop shallots and garlic in a chopper and add to this pan and sauté. Add butter and mix and continue to sauté till soft.
  2. Roughly chop sweet potatoes and add to the pan and mash roughly with a fork. Add salt, crushed black peppercorns, green chillies and mix well. Add lemon juice and cream and mix well.
  3. Transfer into a serving bowl and sprinkle a little pepper powder on top. Garnish with a few alfalfa sprouts and serve.
