History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Lentil And Mint Patties Recipe

  • Red lentil Split 1 cup

  • Fresh Mint chopped 1 cup

  • Oil 3 tbsps + for deep-frying

  • Garlic chopped 3-4 cloves

  • Onions chopped 2 medium

  • Tomato puree 2 tablespoons

  • Bread crumbs 1/3 cup

  • Salt to taste

  • Black pepper powder to taste

  • Refined flour (maida) 2 tablespoons

Method

Step 1

Soak dal in two cups of water for half an hour. Drain and set aside. Heat oil, add chopped garlic, stir for a moment and then add chopped onions and cook till soft. Add dal and cook for a few minutes.

Step 2

Add about two and half cups of water and boil dal till soft and all the liquid is absorbed. Mash dal, cool and then mix with tomato puree, chopped mint, dried breadcrumbs, salt and pepper powder.

Step 3

Divide it into small equal portions. Form them in to a round tikki shape and then coat with refined flour. Heat sufficient oil in a kadai on moderate heat. Deep-fry these patties until crisp and golden brown in colour.

Step 4

Drain on absorbent paper. Serve hot with chutney of your choice.
