Ingredients for Lemon and Coconut Flavoured Chicken Soup Recipe

  • Chicken cut into ½ inch cubes 2

  • Coconut milk 1/4 cup

  • Oil 1 tablespoon

  • Garlic cloves chopped 4-5

  • Onion chopped 1 medium

  • Lemon grass stalk sliced 2

  • Kaffir lime leaves 2-3

  • Chicken stock 3 cups

  • Salt to taste

  • Black peppercorns crushed 1/2 teaspoon

  • Spring onions chopped 1-2

Method

Step 1

Heat oil in a non-stick pan, add garlic and onion and sauté for a couple of minutes.

Step 2

Add lemon grass and sauté till fragrant.

Step 3

Add kaffir lime leaves and chicken and sauté for three minutes.

Step 4

Add chicken stock, mix and bring the mixture to a boil.

Step 5

Add coconut milk, lemon juice, salt and crushed peppercorns. Mix well and simmer for a minute.

Step 6

Pour the soup into a serving bowl and garnish with spring onions. Serve hot.
