This recipe is from FoodFood TV channel By Sanjeev Kapoor 07 Mar 2017 in Recipes Course New Update Main Ingredients Lemon grass stalk , Basmati rice Cuisine Fusion Course Rice Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Spicy Level of Cooking Moderate Others Veg Advertisment Ingredients list for Lemon Grass Chilli Rice 2 inches Lemon grass stalk 1 1/2 cup Basmati rice soaked 7-8 small Fresh red chillies 1 medium Fresh red chilli sliced 2 tablespoons Oil 1 tablespoon Butter 1/4 teaspoon Coriander seeds 1 teaspoon Cumin seeds 1 tablespoon Onion chopped 10-12 Shallots 6-8 Mushrooms halved 6-8 Cauliflower florets 1 medium Carrot,cut into dices 1 medium Potato cut into dices 1/3 cup Fresh coriander leaves 5 tablespoons Green peas boiled to taste Salt 1 Lemon Method Advertisment Heat oil and butter in non stick pan. Add coriander seeds and cumin seeds, sauté for 1 minute. Add onion and shallots and mix. Chop lemon grass and add alongwith small fresh red chillies, sliced red chilli, mushrooms, cauliflower florets, carrot and potato and mix well. Cover and cook for 2 minutes. Roughly chop coriander leaves.Add green peas, salt, rice and 3 cups of water. Mix well, cover and cook for 2-3 minutes. Cut lemon into slices and add along with coriander leaves and mix well. Cover and cook on medium heat for 8-10 minutes or till rice is done. Serve hot.
