Mix together ginger-garlic paste, refined flour, cornstarch, 1 tsp green chilli paste, salt, egg in a bowl.
Apply 1 tbsp lemon juice and salt to the chicken lollypops. Add them to the masala mixture in the bowl and mix well.
Thinly slice spring onion bulbs. Heat sufficient oil in a deep pan and deep fry the chicken lollypops.
Heat 2 tbsps oil in a non-stick pan. Add spring onion bulbs and saute. Chop the spring onion greens and set aside.
Add ginger and garlic to the pan and saute. Add sugar and salt and saute till sugar caramelizes.
Drain the lollypops and put into the pan with the caramelized onions.
Add spring onion greens, remaining green chilli paste, remaining lemon juice and mix well. Saute for 2-3 minutes.
Transfer into a serving plate and serve hot.
