Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Khumb Baby Corn Hara Pyaaz Recipe

  • Button Mushrooms quartered 40

  • Babycorns diagonally sliced 10

  • Spring onion greens chopped 5 stalks

  • Cumin seeds 1/2 teaspoon

  • Cloves 4-5

  • Onions chopped 2 medium

  • Ginger-garlic paste 1 tablespoon

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 1 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Tomato puree 1/4 cup

  • Salt to taste

  • Fresh coriander leaves a few sprigs

  • Garam masala powder 1/2 teaspoon

Method

Step 1

Heat a non stick pan, add cumin seeds and cloves and roast till fragrant. Add onions and roast on medium heat, stirring continuously till golden.

Step 2

Add ¼ cup water, ginger-garlic paste and mix well. Add turmeric powder, coriander powder, red chilli powder, tomato puree and mix well.

Step 3

Add babycorns and mushrooms and mix. Add 1 cup water and mix. Add salt, cover and cook for 2-3 minutes.

Step 4

Chop spring onion greens and add to the pan and mix. Chop coriander leaves and add and mix. Add garam masala powder and mix. Cover and cook for 5-7 minutes.

Step 5

Transfer into a serving bowl and serve hot.
