Khichuri Recipe - How to make Khichuri

  • Rice 1 cup

  • Split green gram skinless (dhuli moong dal) 1/2 cup

  • Cauliflower cut into florets 1/4 medium

  • Carrot 1 inch pieces 1 medium

  • French beans 1 inch pieces 5-6 1 cm dices

  • Potato quartered 1 medium

  • Pure ghee 2 teaspoon

  • Bay leaf 1

  • Green chillies slit 3-4

  • Tomato quartered 1 large

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Sugar a generous pinch


Step 1

Dry roast moong dal in a kadai till fragrant. Soak rice in two cups of water for half an hour and drain.

Step 2

Heat ghee in a thick-bottomed pan and add bay leaf. Add green chillies and vegetables. Stir-fry for a minute or so. Add tomato, turmeric powder, rice and dal.

Step 3

Add four cups of water. Stir and bring to a boil. Add salt and sugar. Cook, covered, till rice is done. Mix well. Serve hot.
