Ingredients list for Jalapeno Corn Bread
- 1 cup Cornmeal
- 1/2 cup Refined Flour
- 1 cup Milk
- 1 Egg beaten
- 1/2 cup Corn kernels boiled and mashed
- 4-5 Jalapeno chopped
- 1/2 cup Cheddar cheese grated
- 1 large Onion chopped
- 1/2 cup Olive oil
Method
- Preheat the oven to 300°C. Grease and dust an eight-inch round cake tin. In a mixing bowl, whisk together corn meal, refined flour, milk and egg.
- Add corn, jalapenos, cheese and onion and mix. Fold in the olive oil.
- Pour into the greased tin and bake in preheated oven for forty five minutes. Cool, cut into slices and serve.
