Ingredients list for Jalapeno Corn Bread

  • 1 cup Cornmeal
  • 1/2 cup Refined Flour
  • 1 cup Milk
  • 1 Egg beaten
  • 1/2 cup Corn kernels boiled and mashed
  • 4-5 Jalapeno chopped
  • 1/2 cup Cheddar cheese grated
  • 1 large Onion chopped
  • 1/2 cup Olive oil

Method

  1. Preheat the oven to 300°C. Grease and dust an eight-inch round cake tin. In a mixing bowl, whisk together corn meal, refined flour, milk and egg.
  2. Add corn, jalapenos, cheese and onion and mix. Fold in the olive oil.
  3. Pour into the greased tin and bake in preheated oven for forty five minutes. Cool, cut into slices and serve.
