Ice Cream Christmas Pudding

Ingredients list for Ice Cream Christmas Pudding

  • 2 litres Vanilla Icecream
  • 1/4 cup Almonds
  • 1/4 cup Pistachios
  • 1/4 cup Cashewnuts
  • 1/4 cup Walnut kernels
  • 10-15 Glazed cherries
  • 2 piece Candied orange peel
  • 3-4 piece Ginger (candied)
  • 2 tablespoons Grand Marnier
  • 1 teaspoon Orange rind grated
  • 1/4 cup Chocolate chips
  • 1 tablespoon Brandy

Method

  1. Dry roast almonds, pistachios, cashewnuts and walnuts for two to three minutes or till crisp. Allow to cool and chop roughly.
  2. Quarter glace cherries. Finely chop candied orange peel and candied ginger. Combine cherries, orange peel, candied ginger, Grand Marnier, brandy and grated orange rind.
  3. Mix well and set aside to marinate for forty-eight hours. Using a metal spoon, break up ice cream into a large bowl.
  4. Add chopped nuts, marinated fruits and chocolate chips and stir to mix well.
