Ingredients for French Pea and Mint Soup Recipe

  • Shelled green peas 1 1/2 cups

  • Butter 2 tablespoons

  • Onion roughly chopped 1 medium

  • Garlic crushed 2-3 cloves

  • Leeks chopped 1 tablespoon

  • Iceberg lettuce leaves 2-3

  • Salt to taste

  • Black pepper powder to taste

  • Mint leaves 7-8

  • Vegetable stock as required

  • Cream 2 tablespoons

  • Red capsicum thin strips few


Step 1

Heat butter in a non stick pan, add onion, garlic and leeks and saute for 1 minute. Add green peas, lettuce leaves, 1 cup water, salt and pepper powder and mix.

Step 2

Add mint leaves and let the mixture come to a boil. Cover and cook for 2-3 minutes. Strain the peas and cool. Put them into a mixer jar and puree with a little cold stock.

Step 3

Pour this back into the pan and heat. Adjust salt. Add cream and mix. To serve place red capsicum strips in the centre of a soup bowl, pour the soup all around it and serve hot.
