Ingredients for Focaccia With Chicken And Mozzarella Recipe

  • Focaccia 6 inch diameter 4 bread

  • Chicken boneless 2

  • Mozzarella cheese sliced into 4 50 grams

  • Extra virgin olive oil 1/4 cup

  • Fresh parsley finely chopped a few sprigs

  • Salt to taste

  • Black peppercorns crushed 1/4 teaspoon

  • Fresh basil leaves 8-10

  • Tomatoes thickly sliced 2 medium

Method

Step 1

Slice each foccacia bread horizontally into two. Slice cheese into four slices. Slice each chicken breast into two. Make a marinade of olive oil, parsley, salt and crushed peppercorns. Keep one fourth of marinade aside.

Step 2

Marinate the cheese slices and chicken breasts, separately in the remaining marinade for an hour. Heat a grill or tawa. Pick the chicken breasts from the marinade and cook them over the grill/tawa, covered, till both sides are done.

Step 3

Apply remaining marinade to the foccacia bread slices. Place the basil leaves on the base along with the tomato slices and marinated mozzarella cheese slice.

Step 4

Place a piece of grilled chicken breast and cover with another slice of focaccia and serve.
