Ingredients for Eve’S Pudding With Mango Recipe

  • Ripe Mangoes peeled and sliced 500 grams

  • Refined Flour 3/4 cup

  • Unsalted butter 1/4 cup

  • Castor sugar (caster sugar) 1/4 cup

  • Egg 1

  • Vanilla essence 1/4 teaspoon

  • Baking powder 3/4 teaspoon

  • Sugar 1/4 cup


Step 1

Preheat oven to 160°C.

Step 2

Cream butter with castor sugar until pale and soft. Beat in the egg and mix. Add vanilla essence. Sieve refined flour and baking powder onto this mixture.

Step 3

Mix with a palette knife in a cut and fold style. Take a pudding mould. Arrange the mango slices at the base. Sprinkle sugar over them. Put the pudding batter over and level the top.

Step 4

Bake in the preheated oven at 160°C for about one hour.
