Eggless Pineapple Mousse Recipe - how to make Eggless Pineapple Mousse

  • Canned pineapple at room temperature6 slices

  • Condensed milk 400 grams

  • Carrageenan (vegetarian gelatin) 2 teaspoons

  • Water 1/2 cup

  • Whipped cream 2 cups

  • Pineapple Essence a few drops

  • Edible yellow colour a few drops

  • Glazed cherries as required


Step 1

Chop pineapple slices roughly. Heat ½ cup water in a bowl in a microwave oven.

Step 2

Add carrageenan and stir till well blended.

Step 3

Place condensed milk in a deep glass bowl, add pineapple (keeping aside a few pieces for garnish) and whipped cream and mix well.

Step 4

Add pineapple essence, yellow colour and mix well.

Step 5

Add dissolved carrageenan and mix.

Step 6

Pour the mixture into individual glasses or bowls or ramekin moulds.

Step 7

Keep them in a refrigerator to set for 2-3 hours.

Step 8

Garnish with pineapple pieces and glacé cherries and serve chilled.
