Ingredients list for Cucumber and Arugula Pinwheel Sandwiches

  • 2 Cucumber peeled and sliced vertically
  • 7-8 White bread slices
  • 8 white bread slices
  • 4 tablespoons mayonnaise
  • to taste Crushed black peppercorns
  • to taste Salt
  • 2 tablespoons chopped capers
  • 1 tablespoon chopped dill leaves
  • Juice of ½ lemon

Method

  1. Discard edges of bread slices and soak them in water for some time. Squeeze the excess water.
  2. Spread a large cling film on the worktop and place the bread slices connecting the edges together so that it becomes a rectangle mat. Press the sides so that the slices stick to each other at the edges.
  3. Spread mayonnaise all over and sprinkle crushed peppercorns, salt, capers and chopped dill on top. Place cucumber slices, arugula leaves and again sprinkle salt, crushed peppercorns and lemon juice.
  4. Roll the arrangement tightly into a cylinder and seal the ends by tieing a knot at both ends. Refrigerate for 20-25 minutes.
  5. Slice the sandwich into medium pieces and serve immediately with tomato ketchup.
