  • Cucumber juice 1 cup

  • Powdered sugar 1/4 cup

  • Lemon juice 1 tablespoon

  • Honey 1 tablespoon

  • Thick cream 2 cups

  • Fresh mint sprigs 1


Step 1

Mix powdered sugar and cucumber juice and stir till the sugar is completely dissolved. Add lemon juice and stir.

Step 2

Add honey and cream and whisk the mixture till soft peaks form. Spoon the mixture into a plastic container with a tight fitting lid.

Step 3

Freeze overnight or till well set. Scoop out into individual bowls and serve decorated with a mint sprig.
