Crispy Stuffed Mushrooms

Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

  • Button mushrooms 16

  • Cheese 2 cups

  • Oil 2 tbsps + to deep fry

  • Cloves chopped 8

  • Green chilli chopped 1

  • Salt to taste

  • Black pepper powder 1/2 teaspoon

  • Food colour large pinch

  • Onion chopped1 small

  • Refined flour (maida) 1/4 cup

  • Bread crumbs 1/2 cup

  • Tooth picks 16


Step 1

Separate the stems from mushrooms. Keep aside. Make cavity in mushroom caps with knife. Keep aside. Finely chop the mushroom stems. Add chopped onions, garlic, green chillies, salt, black pepper, food colour and mix well.

Step 2

Heat 2 tbsp of oil in a pan and add chopped onions, garlic, green chillies, salt, black pepper, food colour saute the above mixture for 2 minutes till it becomes dry. Add grated cheese to it after removing it from flame.

Step 3

Take refined flour in bowl, add salt, food colour and prepare a thick batter. Keep aside. Now fill the mushroom caps with the mixture and hold two filled caps together with open ends facing each other. Bind them together by putting toothpicks into it.

Step 4

Dip the mushroom into batter and roll it in breadcrumbs. Deep fry the mushrooms in preheated oil till it becomes golden brown. Serve as it is or remove the toothpicks and cut it into two pieces. Serve hot with tomato ketchup.
