Ingredients

  • 8 medium cucumbers, peeled 
  • 4 inch ginger piece, chopped
  • 8 green chillies, chopped
  • Salt to taste                                                 
  • 4 cups buttermilk
  • 1 tsp white pepper powder
  • 2 tbsps lemon juice
  • 1 red capsicum, finely chopped

Method 

  1. For each portion halve 2 cucumbers lengthways and scoop out the seeds.  Cut into chunks and put in a blender jar.
  2. Add 1 ginger, 2 green chillies, salt, 1 cup buttermilk and blend to a fine puree.
  3. Add ¼ tsp white pepper powder and ½ tbsp lemon juice and blend again. 
  4. Pour into a soup bowl, sprinkle some red capsicum and chill in a refrigerator.  
  5. Serve chilled.
