Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Coconut Bread Pudding Recipe

  • Coconut Milk 2 cups

  • Brown bread 1 loaf

  • Eggs 3

  • Sugar 1 cup

  • Whole milk 3 cups

  • Golden apricots 16-18

  • Cinnamon powder 1/4 teaspoon

  • Butter for greasing


Step 1

Preheat oven to 180°C. Cut bread into thick slices and break into medium sized pieces.

Step 2

Break eggs into a bowl, add sugar and mix. Add coconut milk and mix.

Step 3

Add milk and mix well. Add bread pieces and let them soak.

Step 4

Quarter golden apricots and mix.

Step 5

Add cinnamon powder, mix and let the mixture stand for 15-20 minutes.

Step 6

Brush a baking dish with butter.

Step 7

Transfer bread mixture into the baking dish.

Step 8

Bake in preheated oven for 40-45 minutes.

Step 9

Serve hot or cold or at room temperature.
