Ingredients for Chicken in Tamarind Sauce with Jasmine Rice Recipe

  • Boneless chicken breasts 2

  • Tamarind pulp 3-4 tablespoons

  • Jasmine rice cooked

  • Thai red curry paste 3 tablespoons

  • Oil 4 tablespoons

  • Brown sugar 1 tablespoon

Method

Step 1

Make incisions on chicken breasts. Apply 1 tbsp red curry paste on both sides of each breast. Heat 2 tbsps oil in a non stick pan. Place chicken breasts on it and cook, turning sides, till well browned on both sides.

Step 2

Heat remaining oil in another non stick pan. Add remaining red curry paste and sauté for a minute. Add tamarind pulp and mix well. Cook for a minute. Add 5-6 tbsps water and stir to mix. Cook till it comes to a boil. Add brown sugar and mix well. Pour the sauce over chicken and coat them well with the sauce.

Step 3

Place chicken pieces on a serving plate and pour the sauce over it. Place cooked jasmine rice along the side and serve immediately.
