Ingredients list for Chicken Scallopini
- 4 Boneless chicken breasts
- 4 tablespoons Olive oil
- to taste Salt
- 1 teaspoon Dried parsley
- 1/4 teaspoon Dried thyme
- to taste Black pepper powder
- 2 tablespoons Refined flour (maida)
- 1 cup Feta cheese, grated
- 3-4 cloves Garlic, chopped
- 2 tablespoons Lemon juice
- 1 teaspoon Lemon zest
- to garnish Lemon wedges
- to garnish Fresh coriander leaves
Method
- Slice each chicken breast into two. In a bowl mix together two tablespoons olive oil, salt, parsley, thyme and black pepper powder.
- Marinate the chicken breast for half an hour with the above mixture. Sprinkle the flour over them.
- Heat the remaining olive oil in a grill pan. Grill the chicken pieces until browned on both sides or till done.
- In another bowl mix together feta cheese, garlic, lemon juice and lemon zest and mix well.
- Coat the chicken with the cheese mixture and gratinate till the cheese melts.
- Serve hot with lemon wedges and fresh coriander leaves.
