Ingredients for Chicken Noodle Soup Thai Style Recipe

  • Boneless Chicken cut into small pieces 150 grams

  • Boiled Noodles 1/4 cup

  • Chicken stock 2 cups

  • Lemon grass stalk 1

  • Ginger 1 inch

  • Spring onion bulbs 2

  • Kaffir lime leaves 2

  • Fresh red chilli 1

  • Juice of ½ lemon

  • Salt to taste

  • Fresh coriander sprigs 4-5

  • Lemon wedge for garnishing


Step 1

Cut lemon grass into diamond shaped pieces. Roughly chop ginger.

Step 2

Heat chicken stock in a non-stick pan, add lemon grass and ginger and mix well.

Step 3

Roughly chop spring onion bulbs.

Step 4

Add chicken pieces and noodles to the pan and mix well. Tear lime leaves and add.

Step 5

Roughly chop fresh red chilli and add to the pan. Add lemon juice and mix well. Add salt and mix well. Add spring onion bulbs.

Step 6

Roughly chop coriander sprigs and add and mix again. Cook till chicken is done.

Step 7

Transfer into a serving bowl and serve piping hot garnished with a lemon wedge.
