Cheese, Chilli And Olive Quesadillas

The most common impression about Mexican food is that it is hot and wholesome and has many similarities with Indian food. And like Indian cuisine Mexican is not one single cuisine but many. There is a feast of flavours for the food lover as the waters of the Gulf of Mexico and the Pacific Ocean teem with fish, while the adjoining regions bloom with luscious fruit like pineapple and papayas. The high plateau yields wonderful vegetables and the north is cattle country…..and to bind all these in one single string are chillies…in every shape, colour and size, from the subtle to the strong, producing a signature to Mexican cuisine.

Ingredients for Cheese, Chilli And Olive Quesadillas Recipe

  • Mozzarella cheese as required

  • Fresh red chilli 1 large

  • Feta cheese as required

  • Black olives seeded and chopped 8-10

  • Olive oil 1/4 cup

  • Tortillas 6

  • Onions finely sliced medium

  • Fresh coriander leaves chopped 2 tablespoons


Step 1

Heat oil in a non stick pan and keep a tortilla on it. Slice mozzarella cheese and keep a few slices on the tortilla. Spread a few black olives.

Step 2

Cover with another tortilla. Break a little feta cheese and place over the second tortilla. Sprinkle onions, some fresh red chillies and some coriander leaves. Cover with a third tortilla.

Step 3

Sprinkle olive oil over and around the tortilla and press lightly. When the underside turns golden, gently turn over and cook till the other side is similarly golden.Make another quesadilla similarly. Cut into wedges and serve hot.
