Preheat the oven to 175°C. Peel the bananas and put them in a mixer jar and blend into a puree. Add the sugar and continue to blend. Add the eggs, one at a time and continue to blend.
Add the lemon rind and blend for half a minute. Sift together refined flour, baking powder and baking soda into a bowl. Add the melted butter to the flour mixture. Add vanilla essence, cream, lemon juice and mix. Add the banana mixture and mix till well blended.
Pour into silicon moulds till three fourths full. Place the moulds in the preheated oven and bake for thirty to forty minutes. Take the moulds out of the oven and cool slightly before you de-mould them. Serve warm or at room temperature.
