Place chicken fingers in a bowl, add salt, 1 tsp red chilli powder, 1 tsp crushed black peppercorns, ½ tsp mustard powder, garlic and lemon juice and mix well. In a bowl, combine whole wheat flour, salt, remaining red chilli powder, remaining crushed black peppercorns and remaining mustard powder. Crush cornflakes in a mortar pestle. Add flour mixture and almonds and mix well. Add egg white to the chicken fingers and mix. Roll them in the flour mixture and dust off excess. Place a silicon sheet on a baking tray. Place the chicken fingers on it and brush them with extra virgin olive oil. Place the tray in the preheated oven and bake for 15-20 minutes. Serve hot.
