Cool, peel and finely chop or mash it. Heat oil in a non stick kadai. Add kalonji, cumin seeds, ginger, green chillies, onions and sauté lightly. Add tomatoes and cook till pulpy. Add red chilli powder, turmeric powder, salt, brinjal, soya granules, ¼ cup water and mix well. Cook till the soya granules are cooked.Add coriander leaves and mix.
