Ingredients for Avacado And Corn Soup Recipe

  • Ripe Avacados 2 medium

  • Corn Kernels boiled and crushed 1 cup

  • Vegetable stock 5 cups

  • Lemon juice 1 tablespoon

  • Salt to taste

  • Oil 1 tablespoon

  • Garlic, crushed 2 cloves

  • White pepper powder 1/2 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons


Step 1

Halve the avocados, remove the pit and peel. Blend them with vegetable stock, lemon juice and salt in a blender until smooth.

Step 2

Heat oil in a medium saucepan, add garlic and sauté for a minute and add the avocado mixture and mix.

Step 3

Add corn and cook on medium heat until just steaming. Season with salt and pepper powder

Step 4

Garnish with coriander leaves and serve hot.
